Alors utilisez-le si vous le pouvez.<\/p>\n<h2>Ingr\u00e9dients<\/h2>\n<p>Pour l&rsquo;Osso Bucco<\/p>\n<ul>\n<li>4 onces de pancetta, coup\u00e9e en cubes de 1\/4 de pouce (voir note de recette)<\/li>\n<li>2 1\/2 \u00e0 3 livres de jarrets de veau (4 \u00e0 6 morceaux de 2 \u00e0 3 pouces d&rsquo;\u00e9paisseur)<\/li>\n<li>1\/2 tasse de carottes coup\u00e9es en d\u00e9s (d\u00e9s de 1\/4 de pouce)<\/li>\n<li>1\/2 tasse de c\u00e9leri coup\u00e9 en d\u00e9s (d\u00e9s de 1\/4 de pouce)<\/li>\n<li>1 oignon moyen (d\u00e9s de 1\/4 de pouce)<\/li>\n<li>2 cuill\u00e8res \u00e0 soupe d&rsquo;ail hach\u00e9 (environ 4 gousses)<\/li>\n<li>3 \u00e0 4 brins de thym frais (ou 1 cuill\u00e8re \u00e0 caf\u00e9 s\u00e9ch\u00e9)<\/li>\n<li>1 tasse de vin blanc sec<\/li>\n<li>1 \u00e0 2 tasses de bouillon de poulet ou de veau<\/li>\n<li>Farine pour saupoudrer la viande avant de la dorer<\/li>\n<li>Sel et poivre<\/li>\n<li>Pour la Gremolata<\/li>\n<li>2 cuill\u00e8res \u00e0 soupe de persil italien<\/li>\n<li>1 cuill\u00e8re \u00e0 soupe de zeste de citron finement r\u00e2p\u00e9<\/li>\n<li>2 gousses d&rsquo;ail, \u00e9cras\u00e9es et hach\u00e9es<\/li>\n<\/ul>\n<h2>Pr\u00e9paration<\/h2>\n<h3>Pr\u00e9chauffez le four:<\/h3>\n<p><strong>1-<\/strong> Pr\u00e9chauffer le four \u00e0 325\u00b0F.<\/p>\n<h3>Faire dorer la pancetta :<\/h3>\n<p><strong>1-<\/strong> Faites chauffer un faitout sur la cuisini\u00e8re \u00e0 feu moyen pendant environ 5 minutes. Ajouter la pancetta dans la po\u00eale, cuire en remuant de temps en temps.<\/p>\n<p><strong>2-<\/strong>Lorsque la pancetta est croustillante et que la majeure partie du gras a fondu (environ 5 minutes de cuisson), d\u00e9poser la pancetta dans une assiette recouverte d&rsquo;un papier absorbant et r\u00e9server.<\/p>\n<p><strong>3-<\/strong> Si n\u00e9cessaire, \u00e9gouttez tout sauf deux cuill\u00e8res \u00e0 soupe de graisse de la po\u00eale.<\/p>\n<h3>Passer les jarrets dans la farine, les faire dorer \u00e0 la po\u00eale\u00a0:<\/h3>\n<p><strong>1-<\/strong> Mettre la farine dans un bol peu profond ou une assiette creuse.<\/p>\n<p><strong>2-<\/strong> Bien assaisonner le jarret de veau avec du sel et du poivre. Farinez les jarrets de veau, secouez l&rsquo;exc\u00e9dent et ajoutez la viande \u00e0 la graisse chaude dans la po\u00eale.<\/p>\n<p><strong>3-<\/strong> Augmentez le feu \u00e0 moyen-\u00e9lev\u00e9 et faites cuire les jarrets de chaque c\u00f4t\u00e9 jusqu&rsquo;\u00e0 ce qu&rsquo;ils soient bien dor\u00e9s (environ 5 minutes de chaque c\u00f4t\u00e9). Verser le vin, puis ajouter suffisamment de bouillon pour arriver un peu plus de la moiti\u00e9 des c\u00f4t\u00e9s des jarrets.<\/p>\n<p><strong>2-<\/strong> Porter \u00e0 \u00e9bullition.
